Advantages

Whey proteins have a high nutritional value – they have the highest rate of breakdown among whole proteins, including casein, which is 80% of milk protein, which is expressed by a sharp increase in the concentration of amino acids and peptides in the blood within the first hour after taking a diet based on whey proteins. At the same time, the acid-forming function of the stomach does not change, which eliminates the disruption of its work and the formation of gases. The high digestibility of whey proteins is confirmed by many years of clinical studies conducted both in our country and abroad, which in clinical practice is the main criterion in the fight against protein deficiency, increasing the recovery rate and reducing the length of hospital stay, as well as reducing the overall economic costs for treatment.

Value

The value of the biological properties of whey proteins is in:

  • Optimal composition in terms of essential amino acids, digestibility, the ability to supply essential amino acids in the amount needed by a person (whey proteins have a PDCAAS coefficient of 1)
  • The presence of cationic whey proteins with important protective properties: lactoferrin, lactoperoxidase, pancreatic ribonuclease, lysozyme, as well as β-lactoglobulin and α-lactabulmin.

Whey proteins (globulins and albumin) are less likely to cause intolerances and allergic reactions in patients than other milk proteins.

Digestibility

A distinctive feature of whey proteins, as a natural biological raw material, is a change in their structure during heating (coagulation – the enlargement of protein molecules and their precipitation, denaturation – the splitting of protein molecules into short chains and individual amino acids, which increases their digestibility).

This is not an indicator of poor quality or spoilage, but, on the contrary, indicates the quality and naturalness of this component, produced without the use of preservatives, stabilizers, etc., and also does not serve as a limitation in the use of DCPM “Nutrimixtura” as a component of ready-to-eat meals during heat treatment, except for drinks (coffee drinks, cocoa, protein drinks, jelly) and milk soups.
